I have tried everything in the past-wet brining, dry brining, basting, butter under the skin etc but never this upside down method. It was so easy and made for the most delicious turkey

Question: we are using only the turkey breasts (one of those large ones that are basically a whole turkey but without wings and legs and stuff). Would we still need to do the buttered bread & flip? Would it make sense to just roast it skin side up the whole time?
What are your thoughts?

Rupa, sorry for the late reply, hopefully the turkey turned out great – how did it go? It’s okay to get rid of that liquid – it’ll still be moist. Also, no need to foil the turkey since my recipe calls for cooking it upside down. Let me know how it went!

I will let you know in these comments (nd tag you on instagram with pics and more comments) how it all turns out! Of course I already tasted the Chutney and the Sweet Potato Halwa and they are delicious! I have learned so much in the last week about all the spices in your recipes!
