I didnt make time for the marinade so I cooked it right away and it came out so flavorful. I have never made a turkey like this before and it was a crowd pleaser. Thank you so much for sharing this recipe. I look forward to cooking your other recipes as well.

Thanks so much for this recipe! Your method is very unusual and it took a real leap of faith for me to follow it exactly.
I am so glad I did because this was the juiciest, most flavorful and easiest turkey roast I have ever made!
I have tried everything in the past-wet brining, dry brining, basting, butter under the skin etc but never this upside down method. It was so easy and made for the most delicious turkey

I am hoping to make this in a few days!
Question: we are using only the turkey breasts (one of those large ones that are basically a whole turkey but without wings and legs and stuff). Would we still need to do the buttered bread & flip? Would it make sense to just roast it skin side up the whole time?
What are your thoughts?

My first attempt in making a Turkey, it was a success all thanks to your recipe,

My hosts and my myself never ate such moist turkey breast ! And that bread after cooking is just an amazing treat to al the hard work

Rupa, sorry for the late reply, hopefully the turkey turned out great – how did it go? It’s okay to get rid of that liquid – it’ll still be moist. Also, no need to foil the turkey since my recipe calls for cooking it upside down. Let me know how it went!

The Masala Turkey has one more hour, the Cranberry Chutney is chilling, and I just finished cooking the Sweet Potato Halwa! I will let you know in these comments (nd tag you on instagram with pics and more comments) how it all turns out! Of course I already tasted the Chutney and the Sweet Potato Halwa and they are delicious! I have learned so much in the last week about all the spices in your recipes! Our cooking is changed forever with learning to roast and grind black cumin seeds when cumin is called for! Our home smells amazing from it too! Thank you for your sharing your knowledge with us!
