I have made so many of your recipes from this blog and your cokkbook and they are all delicious. I made this recipe for the first time today with some leftover potatoes and it was a HUGE hit with my husband and with my 4 year old who normally doesn’t like potatoes. My family loves to have this on the weekends. I’ve made it so often that I keep the spice mix premade in the pantry so that all I have to do is sprinkle it on. I usually make this with russet potatoes cooked in the instant pot and kept in the fridge until I’m ready to use them. Don’t forget to make the tamarind chutney and green chutney – they are amazing all together.

Thanks, Zavera! I haven’t tried this in an air-fryer — I think baking is easier since it’ll all fit on a sheet pan vs multiple batches in an air-fryer. If you experiment though, please let us know how it goes!
