This broccoli cheddar quiche is perfect for a special brunch! The filling is rich, creamy, and cheesy, and it pairs perfectly with a flaky buttery crust.
Broccoli Cheese Quiche
This melt-in-your-mouth broccoli cheddar quiche is my go-to quiche. It’s rich and light, creamy and soft with a bit of texture too, thanks to the broccoli. It always gets rave reviews. I have made it so many times over the years, and I have no idea why it has taken me so long to share it on the blog.
Okay, actually I do know why.
The truth? Because I can be very lazy (hmmm, maybe pragmatic? yeah, that’s a stretch lol…), so I use store-bought pie crusts to make this quiche, like 97.9% of the time. Because really, who the heck has time to make a pie crust from scratch (says the girl with a Homemade Pie Crust Recipe on her blog…).
BUT. As a food blogger, I can’t very well share a photograph of a recipe using store-bought pie crust, can I… or um, can I? Genuinely asking here. Maybe I should consider a Sandra Lee rebrand: Ashley T’s semi-homemade…
It’s true, I do have an amazing Pie Crust recipe on the blog. It’s nut-free and gluten-free and tastes like a traditional buttery pie crust. And even though it’s actually the easiest pie crust recipe ever (like no rolling the dough required because I am just not that fancy), it still takes a whole 3 minutes to come together in the food processor and then another 2 minutes to smush into a pie pan. That’s 5 precious minutes that I can instead spend on my phone scrolling through photos on instagram of momfluencers who are way more put together than I am…
It was bound to happen, you guys. I mean, you give a girl a store-bought pie crust, and she no longer wants to bake. Especially now that it’s so easy to get relatively “clean ingredient” pie crusts. I know the food blogger in me should be trying to convince you that Homemade Pie Crust is the only way, but the exhausted mother in me wants you to do whatever you want without the guilt.
So you choose. Make this using my homemade pie crust, or buy a store-bought pie crust and call it a day. It’s really okay. Everyone will still be super impressed that you made this perfectly creamy and cheesy broccoli quiche. And if they are snooty about it, then (seriously reevaluate that friendship) don’t share. More quiche for us!

Ingredients
- 6 eggs
- 1 cup heavy cream
- 1 cup shredded cheese*
- ¼ teaspoon freshly cracked black pepper
- ¼ teaspoon salt
- 1 ¼ cups broccoli florets
- homemade pie crust or store-bought
Instructions
- Preheat oven to 350 degrees F.
- Whisk together all of the filling ingredients except for the broccoli, fold that in last.
- Pour the filling into a pie crust and place the quiche in the oven on the middle rack.
- Bake for 40 – 50 minutes, or until the filling is set. Be sure to check on the quiche at the halfway mark and cover with foil if necessary to prevent the crust from burning.
- Allow the quiche to cool slightly, sprinkle with a bit more salt and pepper, and serve warm.
Notes
- I’ve made many times using both pre-shredded cheese and freshly shredded… I do prefer freshly shredded but it’ll be great either way. If you’d like a cheese recommendation, I love Kerrygold grass-fed cheddar. You can find it at most Costco stores for a great price.
- For an easy variation, try a different type of cheese. You can use feta or pepper jack or goat cheese or whatever cheese your heart desires. Except for blue cheese. Maybe don’t use that.

I keep frozen store-bought pie crusts in the freezer (TJs and Whole Foods have great frozen GF crusts) and throw this quiche together if we’re having last-minute brunch guests. This quiche reheats really well. It’s the perfect breakfast to make in advance when you have family/friends coming into town. Or for meal prep. Or if you’re preparing for a baby or want to make this for a friend who just had a baby. If it’s that last one, you’re my kind of friend.
